Black Soy Bean Salad

I can not believe how much I love these Black soy beans.. they have 0 carbs
and really taste like black beans to me...
you can get them at or your local
healthfood store if you are lucky!
I buy them by the case on

Canned green chili (entire can)
1 lb Plum tomatoes, seeded and chopped
1/2 cup red Onion, chopped
1/2 cup chopped cucumber
1/3 cup fresh Cilantro, minced
3 Jalapeno, chopped (or less to taste.. I like it hot!)
3 tbsp Lime Juice
1 t grated lime rind
2 cans Black Soy Beans (
1 avocado
3/4 tsp Salt
garlic powder
Step: 1mix all well...
will store in fridge for about 5 days just fine...

omit the black beans and the avocado and you have a great PICO sauce..

Nutrition Information
about 5 carbs per cup...
don't be afraid of tomatoes.. the carbs are mostly in the seeds!
