No one knows these are low carb and they love them! No weird soy taste and no strange texture...taste like the real deal.
The secret is the filler which holds in the juices and acts like breadcrumbs and taste like them too!
1-1/2lb 75% lean ground beef
1/3 cup parmsesian cheese grated
6-Heavenly Harvest Wheat crackers
1 tablespon wheat gluten
1/4 teaspoon xantham gum
1/4 cup of Dreamfieds Spaghetti-ground fine in processor
1 teaspoon dried onion flakes
Tablespoon olive oil
garlic salt/ black pepper to taste
Italian parsley-2-3 tablespoons chopped
2-3 tablespoons water
1 large egg
Step: 1Grind in processor, all ingredients except meat and egg, till dry spaghetti is in fine pieces. Mix into meat with egg, olive oil and water. Shape into balls and fry till brown about 10-15 minutes or bake in oven (of course the fried ones taste better!). These are great like this or add to your favorite sauce/gravy but caution, these suck up a lot of sauce, so plan on making a little extra than normal. Delicious! Easy to adjust this recipe for meatloaf! Just add 1/2 cup chopped onion and some low carb ketchup, 1 teaspoon mustard and cut the cheese out or leave it if you like it.
Nutrition Information
I would say about 1-2 carbs per ball depending on size of balls. I like my balls medium sized, too big and they dont cook through, too small and they dry out. If you use leaner beef they also tend to dry out.
