I substituted low-carb tortillas for the flour ones. | Ingredients | | 1/2 c. vegetable oil
4 low-carb tortillas
6 oz pork sausage
3 c. zucchini, sliced 1/8"
pinch salt
pinch cayenne pepper
1 c. Montery Jack cheese, shredded
1 c. Cheddar cheese, shredded
1 c. tomatoes, chopped
Salsa
Sour cream
| Directions | Step: 1 | Heat oven to 400. In 10" skillet heat oil over med. high heat. Fry each tortilla in hot oil for 1 min.; turn. Continue frying until crispy and lightly browned (1 min.). Set aside. In 2-qt. saucepan cook sausage over med. heat, stirring occasionally, until browned (4 to 5 min.). Stir in zucchini, salt and cayenne pepper. Continue cooking, stirring occasionally, until zucchini is crisply tender (4 to 5 min.). Pour off fat. Place tortillas on cookie sheet. Top each tortilla with about 3/4 c. zucchini and sausage mixture, 1/4 c. Monterey Jack cheese and 1/4 c. Cheddar cheese. Sprinkle with 1/4 c. chopped tomato. Bake for 8 to 12 min. or until heated through and cheese is melted. Serve with salsa and sour cream.
