1/2 c Onion (or more to taste)
1 or 2 Zucchini
1 can crushed tomatoes (not the really big can)
1 small can mushrooms (or fresh mushroooms)
aprox 1 lb ground beef
Italian seasoning mix-to taste
Garlic to taste (if needed)
salt and pepper-to taste
1/2 c water
Sliced mozzarella cheese
| | Directions | | Step: 1 | Cut spaghetti squash in half lengthwise and remove seeds. Place cut-side down in a shallow dish with about 1/2 c water and microwave aprox. 10-15 minutes. Remove and let cool a little. While the squash is cooking in the microwave, brown the ground beef in a large skillet. Drain fat. Scrape pulp from spaghetti squash with a fork. (it will look like shreds) add it to the cooked hamburger in the skillet. Add chopped onion, chopped (bite size) zucchini, and mushrooms. Sautee until veggies are nice and tender. Add crushed tomatoes (don't drain) and allow to heat through. Add italian seasoning mix,garlic, salt,and pepper to taste. (I love McCormick's 1 step garlic herb chicken spice mix ! I use a ton of it because I love garlic). Once desired flavor is achieved simmer a few minutes to let the flavors blend. When done top with the slices of mozzarella cheese and let melt. I like to serve mine from the pan with a spatula while it is still warm and melty. YUM ! Add a side salad and you have a great meal. I can think of tons of things you could add to this to make it a little diffrent. I think sausage might be good in it as well. The best thing is that you can alter all the ingredients to suit your taste !
