I make this every year with Thanksgiving turkey leftovers.
| | Ingredients | | 1 1/2 pound cooked turkey or chicken chopped in small pieces
1 TBLS olive oil
2 Cups chopped white onion
2 TBLS fresh minced garlic
2-3 stalks of diced celery
1 small can green chilis with the liquid
2-14 oz cans chicken broth
3-16 oz cans Great Northern Navy Beans
2 tsp cumin
2 level tsp oregano
1/4 tsp cayenne pepper
| | Directions | | Step: 1 | Sautee the olive oil, onion, garlic. celery and green chilis together. Add turkey and saute until veggies are soft. In a stock pot add the broth and the beans. Add pepper and seasonings to taste. Bring this to a low bubble and then add the sauteed mixture. Heat to a low bubble. stiriring to combine well, and then serve. For garnish add: shredded cheese or a dollop of soure cream, scallions, salsa, etc.
