2-3 cloves crushed garlic
1/2 inch piece of grated ginger
1-2 red peppers - deseeded and sliced into strips
3-4 spring (green) onions - trim ends and sliced into strips
350ml poultry stock (broth) - chicken stock is also fine
25-50ml single or whipping cream depending on induvidual taste
1tbsp preferred oil or butter
2tsp ground cumin
1tsp ground corriander
2tsp tumeric
1-3tsp hot chilli powder
freshly ground black pepper to taste
| | Directions | | Step: 1 | grill turkey fillets on low heat so cooked through and lightly browned on both sides on rack above a tray to collect juices.
while Turkey is cooking place garlic, ginger, spring onion and red pepper into deep pan with oil and fry on med-high heat until peppers begin to blister (approx 5 mins)
add stock and seasonings ( you can use more or less seasoning, this amount is quite mild so i would use this then add more to taste) and let the sauce reduce down, stir occasionaly (approx 8 mins). Add desired amount of cream (more cream makes a milder flavour) and cook for further 2-4 mins.
