No-Bake No-Egg Low Carb Cheese Cake

Introduction
After looking high and low for a desert recipe that is low carb everything
had eggs in it with either too much fat and of course too much sugar.
Since I'm allergic to eggs, I thought there may be some other low carbers
out there who are too. So, here's a cheese cake recipe that has no sugar
substitute and no eggs that I hope you will enjoy as much as I do.
Ingredients
Filling Ingredients

1 envelope of Knox gelatin
2-8oz. packages of cream cheese
1 cup of hot water
1 cup of hot heavy cream
1 tsp of vanilla extract
1 heaping tbsp of Stevia Plus

Crust Ingredients

1 cup of raw almonds
6 tbsp of soy butter/margerine (No saturated fat)
2 packets of Stevia
Directions
Step: 1Crust Directions

In a food processor grind almonds and Stevia with softened soy butter.
Press into a 9" round pie pan and refrigerate.

Filling

Blend softened cream cheese
Boil water and stir in gelatin mix.
Heat cream and stir in Stevia Plus
Slowly blend cooled water mixture
and cream mixture into cream cheese
with vanilla extract. Once mixed pour
into chilled pie shell and refrigerate for
at least two hours.
Note: You can add flavorings such as cinnamin and nutmeg if you like.
