Ingredients
6 egg whites
6 egg yolks
1/4 teaspoon cream of tartar
8 teaspoons Splenda -- divided in half
1/4 cup GNC Baking Mix
1/4 cup pecans -- finely chopped
1 teaspoon orange extract
ICING
4 ounces cream cheese -- whipped,tub
2 tablespoons cream
1/3 cup Splenda
1 teaspoon orange extract
Directions
Step: 1Preheat oven to 350* -In a large mixer bowl, add the egg whites, cream of tartar, extract & the splenda; beat until very stiff peaks form. -In a seperate large bowl beat the yolks with the extract, remaining splenda, stir in 1T.Brown Sugar Twin{optional}; beat well. -Add the 1/4 cup baking mix{sift into yolks}, stir well. -Take a large spoonful of the batter & gently fold it into the egg/flour mixture. -Gently fold remaining egg yolk mixture into the whites being careful not to break down the volumeof the whites. -Gently fold in the pecans. -Spray 12 muffin tins with Pam; gently spoon in the batter equally among the cups. -Bake for 15 minutes then turn the oven down to 325 & bake an additional 15 mins. -Remove from oven & cool on a wire rack. -When cool, mix the frosting & spread over the tops of the muffins.
