Creamy Baked Macaroni & Cheese

Introduction
This mac and cheese really hits the spot. Just a warning-this is by no means low fat.
My whole family enjoys this and doesn't even guess that it's low carb at all.
Thank goodness for Dreamfields.
Ingredients
1lb box Dreamfields Elbow Macaroni
2 cups Half-n-half
2 cups Heavy Whipping cream
1 1/2 cups shredded cheese ( cheddar, monterey jack, whatever you like)
2 to 3 tbs Carbquick
5 tbs Butter
1/4 cup onion, chopped fine (optional)
1 Egg white
1 tsp ground mustard
1/2 tsp salt
1/2 tsp pepper
2 or 3 slices crumbled bacon
Directions
Step: 1Preeat oven to 350F. Spray a 9x13 pan with cooking spray. Cook and drain pasta according to package directions. Meanwhile, melt butter in medium saucepan. Add chopped onion and saute a few minutes, until a little soft. Remove from heat and sprinkle carbquick over butter, stirring to make a thin roux. Start with 2 tbs, add more if you need to. Return to heat and slowly sir in heavy whipping cream, then half-n-half. Cook on medium heat, stirring constantly, until it begins to thicken. Stir in egg white and cook a few more minutes (it should thicken a little more at this point) Add mustard, salt and pepper. Stir in shredded cheese and remove from heat. Pour pasta ito cheese mixture, stirring until mixed, then pour into baking dish , sprinkle with crumbled bacon, and bake about 25 minutes or until it bubbles. Let stand 10 minutes before serving. Serve with a green salad.
