Mock Mashed Potatoes

Ingredients
20 ounces cauliflower florets
2tbsp heavy cream
2 tbsp butter (melted)
1 tbsp Mayonaise
1/2 tsp salt (or to taste)
white pepper to taste

Directions
Step: 1Preheat oven to 350F about 15 min before you plan to serve the mock potatoes. Butter or oil a medium baking pan or ovenproof casserole dish. Steam or simmer the cauliflower for a few minutes or cook in a microwave-safe covered dish with 2 tbsp of water. Microwave on high for 5 min and check. The florets should be very soft. Continue to cook in 1 min increments until done. Drain cauliflower thoroughly; cool slightly. Puree the cauliflower in a food processor with all of the remaining ingredients except the 1 tbsp of butter until completely smooth. (In blender, unless the motor is very powerful, you'll need to puree the cauliflower in batches: Put about half of the cooked florets int the jar of a blender; add half the cream, half the melted butter, half the may, half the salt and pepper. Blend on high until smooth.) Put the puree in the casserole dish and set aside until about 20 min before serving time. (If it will be more than an hour, refriderate.) Dot the top of the mock potatoes with 1 tbsp of butter and bake, uncovered for about 20 min. If you're cooking meat, you can reheat the cauliflower alongside it during the last 15 to 20 min of cooking time or during the restin g period for the meat. Serve hot.
