Jim's Salmon Cakes

Ingredients
1 - 14 oz can of salmon (de-boned)
1 - Tbsp Mayonnaise
1 - Tbsp Parmesan Cheese (grated)
2 - Tbsp Finely Chopped Onion
1 - Large Egg
Fresh Ground Black Pepper
1 - Tbsp Olive Oil
Lemon Wedges
Directions
Step: 1-Open and drain the can of salmon and remove the bones. (This can be messy but your hands are the best tool for this job.)

-Combine the first six ingredients and mash together with a fork. (I use my hands.)

-Form into patties, cover with plastic wrap and refrigerate at least two hours.

-Heat a pan on med.-low and add the olive oil. Wait until the oil and pan are hot and place the patties in the oil. They should sizzle when you put the in the pan. (If they don't sizzle turn the heat up a little.)

-Cook about three min. per side until they are crispy brown.

Serve on bead of lettuce with lemon wedges or sour cream
Makes 4-6 patties.

Variations:
Add some chopped fresh dill weed. Dill and Salmon are a classic combination.

This dish can also be made with crab meat.


Notes: Cakes like these usually have breadcrumbs, which helps bind them together. Until they are cooked be careful how you handle them, as they will crumble easily. Refrigerating will help.

A heavy cast iron pan works best for this kind of cooking, be sure to let it heat thoroughly before adding the patties.

Salt is not needed in this recipe, as the cheese contains enough.
