Yucatan Chicken

Ingredients
1 large onion, chopped (1Cup)
4 clove garlic, minced
1/3 cup frozen orange juice concentrate, thawed
2 tbsp. lemon juice
1 tsp. finely shredded orange or lemon peel
1/2 tsp. dried oregano, crushed
1/2 tsp. ground cumin
1/2 tsp. ground allspice
dash bottled hot pepper sauce
3 bay leaves
12 skinless, boneless chicken breast halves
1 onion, thinly sliced and separated into rings
Directions
Step: 1FOR MARINADE: in a blender container or food-processor bowl combine first 9 ingredients plus 1/2 tsp. salt and 1/4 tsp. pepper. Cover and process until smooth.

POUR marinade into a large plastic bag set in a bowl. Add chicken and bay leaves. Close bag; turn to coat chicken. Marinate in the fridge for 6 to 24 hours, turning bag occassionally.

SPRAY a large skillet with nonstick spray coating. Add sliced onion and cook, covered, over medium-low heat aboaut 5 minutes or till tender.

REMOVE chicken from the bag, reserving marinate. Arrange chicken pieces in a 15x10x1-inch baking pan. Spoon onions over chicken. Pour the reserved marinade over the chicken. Cover with foil.

BAKE in a 350 oven for 35 to 40 minutes or till chicken is done. Discard bay leaves.
