Ingredients
Filling: 4oz cream cheese (softened)
1 c mozzerella cheese (grated)
1/4 c canned parmesan cheese
1/2 pkg chopped spinich (thawed and squeezed)
1-2 T. grated onion
1/2 t oregano leaves
1/2 t basil leaves
1/4 t garlic powder
Directions
Step: 1Directions: Mix filling together really good. (I haven't seen the big pepperonis so I just lined my giant muffin pans with 5 small slices---one on the bottom and the other four bent in half and placed around the sides.) Divide the filling up among the 6 cups. Bake for 20 minutes. Let them sit for a minute to firm up a bit, then scoop them out onto your plate and top each one with 1 teaspoon of your favorite Pizza/Spaghetti sauce. (Watch the carbs there!)
Sometimes I make Garlic/Parmesan Bread Sticks for the kids and open up a can of Hunts 4 Cheese sauce for them to dip them in and then we just use a couple of teaspoons for our pepperoni cups. It's a nice way to not feel too sorry for ourselves while the kids are munching down on those yummy breadsticks! Last time, though, I just opened up a can and froze the remainder of the sauce in small servings.
