ORANGE GINGER BEER

Ingredients
50100g of fresh ginger root, roughly chopped (depending on how strong a ginger flavor you want)
1 liter of spring water (only half a liter if you plan when serving it to add fizzy water)
1 cup of acacia honey (you can use another liquid honey if you prefer, but acacia has such a fine flavor that I like it best)
1 cup of freshly-squeezed orange juice
1 tablespoon of finely-shredded orange zest
1/2 teaspoon of ground cinnamon
Directions
Step: 1Place the roughly chopped ginger and the water in a blender or food processor. Add the acacia honey and the cinnamon and blend. Stir well and put in the refrigerator for 24 hours so the flavors meld. Strain, then chill for another hour. Pour over ice to serve immediately.
