1 TBL ricotta cheese
1 TBL + 1 tsp water
1/2 tsp vanilla
2 TBL pancake flour (I use 12 grain from the health food store--it has 3g per TBL)
1 TBL almond flour or wheat gluten
1/2 tsp baking powder (make sure it's not old)
2 TBL vanilla protein powder (I use Designer Protein)
1 tsp Splenda or 1 packet Equal | | Directions | | Step: 1 | 1. Mix dry ingredients in a measuring cup.
2. Mix wet ingredients in a small bowl.
3. Add dry mix to wet mix and mix well.
4. Let rest, and meanwhile oil the pan and heat to medium heat.
3. Measure out 3 TBL for each pancake. Cook until almost set and carefully turn. Only cook second side for about 30 seconds or so.

Slather them with butter and your choice of syrup/topping, but remember to add the carbs.
