Introduction
I think this the best I've seen or tasted. I adapted it from my Mom's recipe that she used to make as a special thing when I was growing up. NOW I make them at least a couple times a week for my husband and I. Had to reduce the quantities to fit two servings, AND substitute ingredients to make it really LC. I think the end result is very good and very close to tasting like the original higher carb recipe.
I used to use just regular wheat flour and just recently have adapted the recipe to substitute in some soy flour, which drops the carb count AND boosts the protein even more (YAY!). I am BIG on having a GREAT taste rather than lower carbs, as long as I feel the count is reasonable for a serving. Enjoy!
Ingredients
Cherie's Cottage Cakes
This is 1/4 of a whole recipe. = 23.3 carbs - 25.6 protein
Makes two cakes: each cake - 11.6 carbs - 12.8 protein
1/3 c flour, measure half with reg.unbleached and add the other half soy flour, 1 lg. egg, 2 pkts. Splenda, 1/4 tsp. salt, 1 tsp. lemon juice (more to taste after trying recipe), 1/3 c cottage cheese,
Directions
Step: 1In med. mixing bowl, with a fork, beat egg, salt, Splenda, and lemon juice. On top of that, sift flour. Mix well. It will be very thick. Then fold/stir in cottage cheese JUST to mix. It will be very thick.
Spray a rubber spatula with cooking spray. Heavily spray a skillet and heat to med. (4 on an electric stove). Sometimes I use a little cooking oil also. Separate mixture with spatula into half as you add it to heated skillet. Gently spread batter into two approx. 5"x3" ovals, leaving the cake about 1/2" thick, or so.
Lightly brown on both sides (won't take too long). Remove to plate. Spread with unsalted butter and sprinkle with 1/2 packet Splenda and some cinnamon.
I usually make bacon or sausage and fry two eggs for my husband and one for me. It makes a great breakfast! Instead of eggs, sometimes we'll just add cottage cheese with blueberries on top, sprinkled with a pkt of Splenda and some cinnamom.
